It seems like fall is the time of the pumpkin, and only the pumpkin! But don’t forget about other yummy and healthy winter squashes and root vegetables. One of my favorite is the sweet potato! My favorite (and easy!) way to make them is baked sweet potato fries.
Sweet Potato: They are neutral and sweet. Strengthens the Spleen and Stomach function, tonifies Qi and Blood, clears heat and detoxifies. *
1 sweet potato per person
1 tsp Coconut oil
1 T Spice mix of choice (I usually use smoked paprika, cumin, and a dash of cayenne)
Cut sweet potatoes into equal size fry shaped. Put in a large bowl and rub with coconut oil. Sprinkle spice mix of choice over potatoes and stir to coat. Place fries on an elevated baking rack. Cook in a 425 degree oven until crispy on the outside and soft on the inside. This usually takes about 30-45 minutes depending on how many you are making.
